SD #7: From The Kitchen

I woke up super hungry today, so I made the most delicious lunch using a new recipe.  It's times like this when I'm most excited that I most always have fresh spinach in my fridge.  I wouldn't know what to do without it these days.  ; )
Hawaiian Pizza
(Low Carb)

I highly recommend trying out this recipe.  It was outstanding and I can't wait to make it again.  In fact, I purchased another huge tub of fresh spinach at Sams today. Mmm...

Hawaiian Pizza
Tomato Paste
Shredded Mozzarella Cheese 
Turkey Ham (from Aldi; very lean protein)
Pineapple Tidbits (rinsed with water to get rid of as much sugar as possible)


Spinach Pizza Crust

1 cup loosely packed, fresh spinach
1 egg
1 cup loosely packed mozzarella cheese
1 tsp dry basil
1/2 tsp oregano

Preheat oven to 425 degrees Fahrenheit.

Chop the fresh spinach leaves (or pulse in the food processor). Mix with the rest of the ingredients.

Spread dough on a lightly sprayed pizza pan (I use olive oil Pam). 

Bake for 12-15 minutes or until edges begin to brown. 

From here, you can freeze or top the baked crust with ingredients and place under a broiler for 2-3 minutes, or until cheese melts.

Makes one, 12" crust.
Nutritional information for the entire crust: Calories: 323, Carbohydrates: 5, Fiber: 1, Net Carbohydrates: 4, Fat: 19, Protein: 32


I also baked the rest of the cookies and decorated them today.  Here are a few photos taken with my iPhone...

those cookies look fantastic!!! So does the pizza. i have a question on the crust as i am not an avid cooker like you so i am not sure where you can substitute things. Can you do two egg whites instead of 1 whole egg or do you need the yolk to make it stick together? also can you use 2% cheese or does it need to be whole fat in the crust? Thanks for any advise, i really want to try this and am trying to make it as low in points as possible. Can you tell what diet i am on? lol

Yes, I think you could use 2 egg whites in place of the 1 egg and I used the 2% mozzarella. Using a lower fat cheese is definitely a healthier option. It will change the nutrition information (for the better) that's posted under the recipe.
I will try making this with the 2 egg whites very soon and let you know how it turns out. I'm also going to try freezing them once baked.

yah! thanks for the info. And yes i am. =) with egg whites and low fat cheese this crust will have hardly any points! I like that idea! =)
