Five Guys

David and I enjoyed a spontaneous date tonight.  It was a casual date, but a date's a date if you ask me.  And we were long overdue.   

Anyways, we went to Five Guys Burgers and Fries.  I had a tray of peanuts and a bun-less burger with sauteed onions, sauteed mushrooms, green peppers, mayo, and ketchup.  It was pretty good, but I was reminded why we don't ever eat out.  That stuff is NOT good for you.  Our meal was a rare treat.  
David had a cheeseburger with all sorts of toppings and fries.

David's school is off for the weekend to celebrate the Easter Holiday.  This is one of the perks of attending a Jesuit University.  Time off sounded wonderful until they decided to slam him with a bunch of case studies.  We're going to be busy all weekend with our friend's wedding stuff and he won't have time to do any of it, so he bust it out already.  I'm impressed!  He worked on it yesterday and today.  Poor guy was loosing steam towards the end so I may have bribed him with some Five Guys.  Hey, I know how to get things done.  = )  So, Five Guys was a celebration dinner and I didn't have to do any cooking or dishes.
BRILLIANT!!!  


Sweet Ride

I LOVE my sweet ride!  It's nice not having to organize a car schedule with the hubby.  We did well with one vehicle for almost two years.  Can you believe it?!  

Dave's med school schedule is often quite crazy and it's only going to get worse.  I was missing out on job opportunities (aka income) because I didn't have access to a car at all times.  So, it was time to purchase another vehicle that would get me from point A to point B.  I'm very happy with our decision.  It was meant to be!  Plus, I have a sunroof again.  YAY!

Daily Eats

B: Coffee (2 shots espresso, 2 pumps SF vanilla Torani syrup, 2 pumps SF English toffee Torani syrup, 1 1/2 Tbsp. half-n-half, hot water)

early L: Hebrew National FF Beef Hot Dog and 2% Cottage Cheese

early D: 1 Cherry Vanilla PhillySwirl Popsicle (while cooking), Grilled Butterflied Jumbo Shrimp with Cocktail Sauce, Cooked Green Beans and Carrots, Edamame Crisps with Garlic Hummus, 1 Orange Vanilla PhillySwirl Popsicle (16 calories!)

late D: 1 slice Turkey Pastrami, 2 wedges of LF Laughing Cow with Soy Crisps, and cottage cheese

I picked up a box of PhillySwirls at Sam's Club today.  They are sinfully delicious!  Give 'em a try and let me know what you think.

Not Even Kidding

I went to Sam's Club this evening to pick up a couple of items.  Here's what happened while I was checking out....

Cashier:  "Is she with you?"

Me: As I'm looking around I ask, "Who are you talking about?"

Cashier: "Is the person on the card with you?"

Me: "Oh, that's me, here's my license if you need to see it."

Cashier: "If this is really you, you should go to member services right away to have a new card made.  You look much younger and smaller than the person on this card."

Me:  "Oh, okay.  Thanks!  I've been working really hard and have lost a lot of weight.  I had already planned on getting a new license made next week.  I'll be sure to get a new Sam's membership card made too."

HOW FUNNY IS THAT?

Clydesdale

This is just too funny not to share...

When I registered for the 10th Annual OKC Memorial Marathon I ordered a medium sized t-shirt.  Well, the mediums I currently have are a little big.  I found on the website that I can request changes in my registration so that's what I did.  

It goes a little something like this...

Me: I ordered a t-shirt in size medium, but I've lost a lot of weight with all the training.  If possible, I'd like to order a size SMALL t-shirt instead of a medium.  Thanks so much!  = )

Organization Reply: done.. are you still clydesdale div?

Me: Thanks!  And yes, I'm still in the Clydesdale Division.  I'm hoping to change that within the next year.   = )  

The female Clydesdale Division is for runners that are 145 pounds and over.  So, even though I've worked really hard to lose all this weight and am finally considered "normal" for my height, I'm still an overweight runner.  
I'm a Clydesdale!  
Sorry, but I think that's hilarious!  Now I feel like I have one more obstacle to overcome.  

My tentative running goal for 2011:
- Run in the 11th Annual OKC Memorial Marathon and NOT be registered in the Clydesdale category

4 Weeks!

Daily Eats

L: Smoked salmon & spinach crepe, mozzarella caprese, 2% LF cottage cheese

(3 crepes is 1 serving, but I don't normally eat carbs, so I settled for 1 crepe)

D: Grilled FF Hebrew National Hot Dog (40 cal) topped with some turkey chili and 2% cheeses, cooked broccoli with 2% Velveeta cheese, edamame crisps and garlic hummus, and a banana-oatmeal cookie

Today was kind of a junk eating day.  Hopefully I'll be back to my normal good eating habits tomorrow.

Sick & Healthy?

I went to see my doctor today because I'm miserable with a nasty cold.  While I'm sitting on the exam table holding back my congested coughs, wiping my watery eyes, and sniffling, the nurse proceeds to take my vitals.  I had a blood pressure reading of 94/62, a pulse of 64, and no fever.  
I'll say that again... a BP of 94/62!!!  AMAZING!!!  That's a long way from where my BP was 2 years ago.  Can you believe I was on BP meds?  Well, I was on them and it was horribly embarrassing.  So it's pretty awesome that I've completely turned my life around.  I've gone from a sedentary individual on BP meds to a highly active runner and super healthy eater that isn't on any meds.  Talk about a huge praise report!  
So, while I'm currently sick with a cold, I'm one of the healthiest people I know.  Go me!


Oh, and on a very, very sad side note... NO RUNNING until I get over this cold.  Blah!!!
Today was supposed to be my 10 mile day.... major bummer.  Hopefully I'll bounce back and be even stronger than I was before this cold.  = )

Mozzarella Caprese Omelette

I recently discovered the magic of Trader Joe's Basil Pesto.  
It's sooo GOOD!
This is what I had for brunch yesterday.  YUMMY!

MOZZARELLA CAPRESE OMELETTE

the best lil' mozzarella balls in the world!

3 eggs + 2 egg whites and pesto in my fancy crepe pan

once the eggs are mostly cooked, 
i pile on sliced grape tomatoes and sliced mozzarella balls

fold in half

it makes enough for 2 healthy servings






MOZZARELLA CAPRESE OMELETTE

Ingredients:

Eggs (I used 3 eggs + 2 egg whites)
Basil Pesto (I used about 1 Tbsp)
Mozzarella Balls (I used about 8)
Grape Tomatoes (I used about 10)

Directions:
1.  In a bowl, combine eggs and pesto.  Stir well
2.  Pour into ungreased crepe pan or skillet (no need to add oil or butter to pan because there's already olive oil in the pesto)
3.  Cook eggs on low to medium heat until mostly set
4. Add sliced mozzarella balls and sliced grape tomatoes
5.  Fold in half to form an omelette
6.  Heat until cheese is melty and gooey
7. Transfer to plates

Enjoy!
